What to do: Keep feeding on a consistent schedule - generally every 12–24 hours, equal parts flour and water by weight. Consistency is the entire game at this stage. Erratic feeding resets the microbial balance and can add days or even weeks to your timeline.

Days 6–10: Stabilization

This is where your starter starts to smell more pleasantly sour - think yogurt or ripe apples rather than acetone. Bubbles become more consistent and evenly distributed. Rise-and-fall cycles become predictable.

Why it matters: The wild yeast and lactic acid bacteria are now working in a stable, symbiotic relationship. The yeast produces gas (rise), while the bacteria produce acids that add flavour and protect the culture from harmful organisms. This partnership is the entire foundation of sourdough baking.

How to know it's ready: Your starter should reliably double in size within 4–8 hours of feeding, hold a domed shape (not flat or collapsing), and pass the "float test" - a spoonful dropped in water should float rather than sink.

Why You Genuinely Cannot Rush This

Common Troubleshooting (Read This Before You Panic)

"There's a layer of dark liquid on top." That's hooch - a byproduct of your starter running out of food. It's not dangerous. Simply pour it off (or stir it in for a more sour flavour) and feed as usual.

"It smells like acetone." Also normal, especially in the early days or if your starter has gone too long between feedings. A hungry starter produces more alcohol-like compounds. Feed it and it will mellow.

"There's pink, orange, or fuzzy growth." This is different - those colours can indicate mould or harmful bacteria. Unlike hooch or acetone smell, this is a sign to discard and start again with a clean jar.

"It rose once and now it won't rise again." Almost always a feeding consistency issue. Return to a strict schedule at a warm, stable temperature and give it several more days.
